Scotch Single Malt is thought to be the finest Scotch Whisky out there. While that's debatable, one thing's for sure: this Scotch only uses one type of grain.

But there are other rules when it comes to making it, such as using malted barley from a single distillery and aging it in oak barrels for at least three years. Sticklers for rules, those Scotch. And our drams are all the better for it.

Scotch Whisky is seldom aged in new barrels. Bourbon and Tennessee Whiskey casks are usually used for maturation. In addition to that, Whisky is often matured or finished in various wine casks such as Sherry or Port.
 
The Excise Act of 1823 made many significant changes to the way the industry was taxed and regulated. It laid the foundations for the whole modern Whisky industry, resulting in the rapid demise of illicit distilling and an equally rapid growth in the number of legal distilleries in the following years.
