Japan's other iconic spirit comes from Kyushu and Okinawa. Made from barley, sweet potatoes, or rice, it’s lower in alcohol than sake. Unlike sake, which is brewed, shochu is distilled, offering a drier, more complex flavor that pairs well with food.
