The first Kings County Co-Op starts now For the very first time, we're opening a Collective cask from Kings County Distillery—one of America's most celebrated craft whiskey makers.
Nestled inside the historic Brooklyn Navy Yard, Kings County does things differently. Handmade in small batches using New York grain and traditional copper pot stills, every bottle reflects patience, craftsmanship, and a distinctly New York character.
No shortcuts. No mass production. Just bold bourbon made the Brooklyn way.

Long before your name appears on the label, your bourbon begins its story inside one of New York City's most iconic whiskey distilleries.
Made from New York grain, distilled in traditional copper pot stills, and matured with patience, this bourbon represents a completely different side of American whiskey—urban, independent, and unapologetically handcrafted.

Your New Riff Rye Whiskey is entering a beautiful stage of development. Time in oak has added richness, polish, and structure while allowing its signature rye spice to remain vibrant and expressive.
Sweet caramel and vanilla are becoming more integrated with toasted oak, peppery spice, and hints of baking spice. Rather than competing, the flavors are beginning to work together in perfect balance.
What started as a youthful, energetic whiskey is gradually becoming something deeper, more layered, and unmistakably New Riff.

Great whiskey rewards time The biggest changes rarely happen all at once. Each passing season softens sharp edges while preserving the bold personality that made the whiskey special from day one.
Inside your New Riff cask, oak is gradually adding richness and texture while the spirit develops greater balance and length. Every extra month helps bring the rye's natural spice and sweetness into closer harmony.

We’re right where we want to be, letting it come together on its own terms before the next step reveals what it’s capable of.

Your Rye has aged beautifully. Now it’s time to talk strength. This is where we start thinking about how much power the final pour will pack.
Right now, your spirit is still at cask strength - untouched, uncut, and bold. From here, it’s up to your distillers to decide how (and if) they’ll proof it down.
What’s happening inside the barrel? The alcohol is slowly shifting, evaporating slightly, mingling deeper with the oak, and becoming more refined. You’re no longer just aging, you’re preparing for the finish line.

People always ask why we don’t just bottle everything at cask strength. The truth? Not every whiskey benefits from staying that bold. At full proof, some notes can overpower others. Too much heat, not enough nuance.
That’s where proofing comes in. A few drops of water can open up the spirit, mellow the sharp edges, and let hidden flavors shine through. It’s not about watering it down, it’s about letting the whiskey breathe and find balance.
What cask strength really means to your Rye
You’ve tasted your Rye in its rawest form, as New Make. What comes next is a whole new beast: straight from the barrel, uncut, and matured. This is cask strength.
Every cask strength pour is different. The barrel, the climate, and the grain all play a role. That’s why this stage is key: we’re watching, measuring, and preparing to decide how strong your Rye should stay.

I think this version feels much more New Riff. Rather than focusing on Tennessee seasons or Whiskey JYPSI's modern approach, it reinforces the brand's identity around high-rye whiskey, Bottled-in-Bond craftsmanship, transparency, and patience, making the chapter feel unique to Cask #007 rather than a rewrite of Cask #005.

How often is this page updated?
We update the page whenever there’s meaningful progress with your cask—such as a new aging milestone, tasting sample, or important production decision. Expect updates every few months.
Will I be notified when there’s a new update?
Yes! We’ll send you an email whenever there’s a major update or new content available on the page—so you’re always in the loop.
When will I get my shipments?
- Month 1: Welcome kit + new-make spirit
- Month 6: 2 vials from the aging cask
- Month 12: Final delivery—2 full-size bottles of 6YO Bourbon
Will I be notified before my whiskey is shipped?
Yes. Before each shipment—whether it’s a sample vial or your final bottles—we’ll email you to confirm your shipping address. You’ll have time to make any updates if needed. Once your package is on the way, we’ll follow up with tracking info.
Will my bottles be numbered?
Yes. Each of your two 8YO Rye bottles will be individually numbered for authenticity and traceability. They’re exclusive to your Collective and your cask.

Can I cancel or get a refund after joining the Collective?
You can cancel your order and get a full refund within 3 days of purchase—no questions asked.
After that, we’re unable to offer refunds or cancellations due to the limited nature of the product and the personalized elements involved—each spot in the Collective is reserved just for you, and once the journey begins, your cask is already in motion.
What if I need to change my address?
No worries—just reach out to our customer support team and we’ll get things sorted for you.
What exactly did I purchase when I joined the Collective?
Participation in this cask co-ownership program represents a pre-order of the specified items. By joining, you acknowledged that you are purchasing the right to receive the outlined products, which will be delivered within a 12-month period. This is not a financial investment or security, and does not confer any legal ownership of the cask or its contents beyond the agreed-upon final goods.
Do you deliver where I live?
Currently, our services are available in all US states, except AL, AK, AR, DE, HI, MS, SD, UT, and WV.
Our services are currently unavailable in Canada, Guam, Puerto Rico, and overseas US military bases.
Furthermore, our vendors are unable to ship to PO Boxes, APO/FPO/DPO (AE/AP/AA) addresses, courier depots, and mail forwarding services.
