Cask #003
You’re stepping into the most exciting part of your Rye’s journey — when 7 years of patience, oak, and time finally begin to bear fruit.
Cask’s journey chapters
It all starts with grain
This Rye’s story begins as a clear spirit, also known as new make, distilled from 100% rye grain, known for its bold spice and dry finish. Like most clear spirits, it was crafted using column distillation, a method that preserves the grain’s intensity while refining the raw alcohol into a clean, high-proof base.
That spirit was then laid to rest in American Oak for 7 years, gaining structure, depth, and complexity. Now in New York, it will finish in local wine casks, adding balance and a final hometown signature.

Ready to taste?
To really experience it, you’ve got to be in the moment. So before we dive into tasting notes and flavor talk—do you have your vial ready, glass in hand, and a moment to enjoy it?
Take a sip and journey back to where your Rye began
You received 2 vials—one to try now, and one to save for later. When your next samples arrive, you’ll be able to compare how the flavor has evolved.
Before barrels, before time—this is the exact same way how your Rye started it's journey. Distilled from at least 95% rye grain mash bill, this new make spirit is raw, fiery, and full of potential. No aging, no influence—just spirit, grain, and craft.
What did you taste?
Every new make tells a different story. What stood out to you in your first sip?
Keeper’s feedback:
We’re tasting pure grain character—cracked rye, a touch of orchard fruit, and that unmistakable new make fire. It’s raw, punchy, and full of promise. Exactly what we want before the barrel starts telling its side of the story.

How your cask is developing
Inside our warehouse:
Early distiller impressions
This one’s really showing its age in the best way. The oak has given it depth, but the spirit itself still shines through. Balanced, steady, and flavorful.
Couldn’t agree more. The edges have rounded out beautifully, the spice is integrated, and the wood is carrying everything in harmony. It feels refined now, not just bold.
Yeah! Calm strength. It’s holding steady, and it’s right where we’d hoped it would be at this point.
Why small changes matter
Maturation isn’t about sudden leaps, but tiny, steady steps. Each season brings the whiskey closer to its best self — a touch more depth in color, a gentler mouthfeel, a rounder finish. Over time, those details shape not just the flavor but the whole character of the spirit.
At this stage, your cask is leaning toward extra warmth and a silk-like smoothness, setting it apart from others of the same age.
What stuck with you in this chapter?
You’ve just peeked inside the barrel—literally. Which part of this chapter left the biggest impression on you?
Keeper’s feedback:
If it seems like a lot of quiet magic’s happening behind the scenes… you’re right. These are the building blocks of boldness. They may not shout but they never miss.
Proof in progress
Your Rye has aged beautifully. Now it’s time to talk strength. This is where we start thinking about how much power the final pour will pack.
Right now, your spirit is still at cask strength - untouched, uncut, and bold. From here, it’s up to your distillers to decide how (and if) they’ll proof it down.
What’s happening inside the barrel? The alcohol is slowly shifting, evaporating slightly, mingling deeper with the oak, and becoming more refined. You’re no longer just aging, you’re preparing for the finish line.

News from your distillers
People always ask why we don’t just bottle everything at cask strength. The truth? Not every whiskey benefits from staying that bold. At full proof, some notes can overpower others. Too much heat, not enough nuance.
That’s where proofing comes in. A few drops of water can open up the spirit, mellow the sharp edges, and let hidden flavors shine through. It’s not about watering it down, it’s about letting the whiskey breathe and find balance.
What cask strength really means to your Rye
You’ve tasted your Rye in its rawest form, as New Make. What comes next is a whole new beast: straight from the barrel, uncut, and matured. This is cask strength.
Every cask strength pour is different. The barrel, the climate, and the grain all play a role. That’s why this stage is key: we’re watching, measuring, and preparing to decide how strong your Rye should stay.
What’s your style?
When it comes to whiskey strength, what do you usually go for?
Keeper’s feedback:
No wrong answers here. Some folks want full fire, others want finesse. That’s why we’re taking our time to get the strength just right.
You’ll get the chance to taste how we did in the next chapter, when you receive new samples straight from the cask.
