Old Tom Gin

Not to be confused with your neighbor’s grandfather or a scraggly feline chasing around a rodent who goes by “Jerry,” Old Tom Gin is a bygone recipe for Gin that dates back to England in the 1800s.

While there aren’t any hard and fast rules around how it should be made (aside from using juniper, which is a requirement for all Gins), Old Tom can be aged, made with added sugar, and use a neutral base spirit — or not.

What’s clear is that the final result falls somewhere between a malt-heavy Genever and a biting London dry Gin.
