A great craft Bourbon made even better with a Port wood finish for a delectable dram.

The story of Woodinville Whiskey Co. starts in 2010 with two best friends — founders Orlin Sorensen and Brett Carlile. They set out to create a great craft Whiskey, and these two gentlemen started things off right by enlisting the help of industry icon David Pickerell — the former master distiller at Maker’s Mark. So although their business is young, they’ve already won both Craft Whiskey of the Year and Craft Rye Whiskey of the Year for two years running from the American Distilling Institute.

Sometimes you CAN improve on a good thing.

The team at Woodinville starts with the signature, award-winning Straight Bourbon. The mash bill is a tradition corn/rye/barley mix, but the barrels make it unique. The wood is slowly air-dried for eighteen months before being coopered into barrels and slow-roasted to a dark char. The Bourbon is aged in those casks in the extreme weather of central Washington for five years. That’s ALL good stuff. But then they finish it in Ruby Port pipes for an additional six months, making it simply a delectable tribute to wood. As you can imagine, this is limited quantity stuff. You normally can’t even get it outside of Washington. But we got it, and that means you can get it too.

Appearance / Color
Deep Mahogany

Nose / Aroma / Smell
This Bourbon is big and burly in the nose with loads of freshly toasted wood, plenty of baking spices, plum jam, and fresh-baked raisin bread.

Flavor / Taste / Palate
The flavors are big too, arriving first with Irish bread pudding, cut cedar and pine, stewed cherries, figgy pudding, and more baking spices.

Finish
The finish is long with a simple woody richness.

This one wasn't for me. The port finish conflicts with the bourbon rather than adding to it. I tried to let it sit for a month before coming back to it but I still had the same issue. It ends up tasting like a bad dessert wine in my opinion. My wife enjoys it though so it's not bad, it just wasn't my jam.
