This could be the most unique Mezcal we’ve tasted in years with a deep flavor profile reflecting the terroir of the Oaxaca Highlands.
"Sombra" is the Spanish word for "shadow." Sombra Mezcal was founded by renowned Wine Sommelier Richard Betts. A few years ago the brand was acquired by Davos Brands who immediately acquired its own private palenque (Mezcal facility) that focuses on environmental-friendly production including solar-powered millstones and fiber recycling among other innovations.
Sombra Mezcal Ensamble really is unique. Although Mezcal can theoretically be made from any of the two hundred varieties of agave, the VAST majority of Mezcals are made from Espadín agave. Espadín is a great agave, but it is also easier to farm. Many other types of Mezcal agave need to be harvested in the wold — a much harder and more expensive process. Sombra Mezcal Ensamble is a limited edition "ensemble" of two wild agaves — Tepeztate (61%) and Tobalá (39%). It’s also bottled at an impressive 51.6% ABV, and we’ve never seen a high proof Mezcal like that before. This production run is limited to just 2000 bottles worldwide.
