Oola Distillery was founded by Kirby Kallas-Lewis in Seattle's Capitol Hill Neighborhood. All grains for their Spirits are sourced from two organic farms in Eastern Washington. Once the ingredients arrive at the distillery, they are milled and mashed before being distilled through Kirby's copper-pot still.
This incredible Oola Waitsburg Bourbon is really not just a nice medley of corn, rye, malted barley and white winter wheat. It's a deeply complex, balanced Bourbon that’s just the right amount of sweet. Post-distillation, the Bourbon is aged in small, American white oak casks that undergo huge temperature swings of up to 50-70° each day. This extreme climate change enhances the interaction between barrels and Spirit, giving the perfect flavor profile. Expect spicy aromas, with hints of cinnamon, ginger and black peppercorn underlying notes of caramel, vanilla, savory pickled notes and chutney the finish is warming.
