Zafra, Spanish for, you’ve guessed it - harvest, is the brainchild of quite the legendary Master Distiller Francisco “Don Pancho” Fernandez Perez. Through the course of 50 years he travelled the world to assist in training of many  Master Blenders & to taught the ways of many spirits - Vodka in Poland, Whisky in Scotland and Wine in France. After 50 years in the business he considers himself to be in his prime. Zafra 21 is in his humble opinion, the pinnacle of his career.
Are your high expectations shaped by the price, presentation and marketing spin & buzz? In this case, they should be. This Rum-my nectar matures for at least 21 years in ex-Bourbon barrels. Once blended & let loose it comes at you with both guns blazing… but it won’t shoot you down, as it is quite the gentleman’s drink -rich, nuanced, sophisticated and full of character. Mahogany & coppery gold
Smell / Nose / Aroma
Rich. The fruit is prominent (orange, pear, cherry, toffee). Some oak.
Flavour / Taste / Palate
Smooth body. Toffee and molasses are the foundation. Hints of tobacco, approachable Bourbon notes, cherries, vanilla, oak, spices and even grapes. An angel’s touch of sweet.
Lingering...with an encore performance or two.
