Kirk Spahn and Trenton Ulicny met while working on a graduate school project together at Columbia University in New York. Spahn had researched the significance of rice wines and beverages while studying East Asian culture at Dartmouth. In 2004 they founded their new beverage company that brings a modern, American sensibility to traditional Japanese premium Sake.
The Sake classification "Junmai" comprises just 15% of all the Sake produced in the world. TYKU Junmai Sake is the core Spirit in the TYKU range of premium Sakes. The ingredients include specialty Akebono Sake rice, ultra-pure water, koji, and yeast at the Umenoyado Brewery in Nara, Japan. This multi-award-winner is delivered at 15% ABV with absolutely no additives of any kind.

Premium Sake is made from polished rice — wearing away the outer layers to reach more of the sweeter starches in the inside. Sake made from rice that has been polished to remove 30% or more of the outer grain is called "Junmai."
