Casa Noble Tequila was founded by Jose “Pepe” Hermosillo aka “Maestro Tequilero.” Maestro is a celebrated Tequila maker, with a dedicated cause; making Tequilas worth your time. Tequila crafted from certified organic blue weber agave plants, matured exclusively on the 3000-acre Casa Noble estate, nestled in the Jalisco region of Mexico, in a rolling wave of lush hillsides.
These spiny barbed creatures, looking like displaced sea urchins, have their own personal microclimate:
“Grown at a high altitude, the fields are on an incline, which makes for more fibrous agaves, yielding a Tequila with lots of character and spice and herbal notes.” When the blue agave turn 14 they are harvested by Casa Noble's legendary “agave whisperers,” hired full time, these “jimadors” have an enchanting relationship with the land having lived and worked on it for generations.
The hearts of the plant or piñas are removed using a small, flat knife called a coa. Casa Noble follows traditions that have been passed down for over 7 generations. The piñas are cooked in stone ovens for 36 hours and distilled thrice through a copper-pot still. The luxury Tequila is then matured in French oak casks for 364 days (the maximum length permitted by law).
Crafted meticulously in small batches, Reposado earned 93 points by Wine Enthusiast Magazine, and Casa Noble was named "Tequila Producer of the Year" at the 2016 International Spirits Challenge.

The agave hearts or ‘piñas' are cooked in stone ovens for 36 hours at approximately 212° Fahrenheit (larger scale distilleries usually cook piñas in stainless steel for only six to eight hours).
