Ian Newton, Max Lents, and Eli Breitburg-Smith are the musician, the philosopher, and the anthropologist behind Baltimore Spirits, based in Baltimore, Maryland. Perhaps not your usual distilling crowd but maybe that’s precisely their secret to crafting creative new Spirits. Taking Old World distillation and transforming it into New World Spirits, their portfolio ranges from Rye Whiskey, Gin, Apple Brandy Liqueur, Amari, Mezcal Style Smoked Apple Brandy, and a whole collection of what they call One Offs, Singularities, Rarities, and Oddities.
Asimina Pumila Pechuga Style Apple Brandy is the only one of its kind. It’s distilled only once a year and it’s a rare combo: Mexican Pechugas meet Maryland terroir. It begins the same as their Fumus Pumila expression where local smoked apples are distilled instead of agave, Mezcal style. Asimina Pumila takes it one step further and while smoked apples are still fermented in an open vat and distilled in copper pot stills, local paw paw, persimmon, and black walnut are added in the final step. Plus, a Maryland Country Ham is hung in the still above the pot. For that extra touch of subtle salinity and savory notes, supported by fruits and nuts. Savor it neat or have some fun with it in cocktails.
