Oloroso Sherry casks do wondrous things with Single Malt Whiskies, and Hyde No. 7 does it on the Irish side.

Hibernia Distillers is fairly new, being founded in 2014 by brothers Conor and Alan Hyde in the wee town of Skibbereen, Ireland. But in a few short years this small-town maker of traditional Single Malt and Single Grain Irish Whiskey is rocking the world with products available in fifteen countries and an early, hard-won reputation for creating a line of seven amazing, aromatic, award-winning examples of liquid Irish pride.

Hyde No. 7 is a 6 year-old Irish Single Malt. It was distilled using a copper pot still and aged from start to finish in first-fill Oloroso Sherry hogshead casks. And it is bottled without additives or chill-filtration at a spot-on perfect 46% ABV.

Those are some lovely statistics, but the proof is always in the dram. And in that bottle you will find everything you love about Sherried Irish Whiskey — rich notes of oranges and chocolate truffles over a base of stone fruits. A happy day ensues.

Charlie
Charlie,
Loved the plum

Simon
Simon,
The plum was just too much for me.

Antti
Antti,
It is a complex, Single Malt Irish Whiskey that has an aromatic birth; while a rich & oily life leads to a long & bold death with notes of honeyed spices, caramel & tart red berries.

Eddie
Eddie,
Very oily. Tastes more like sake than whisky.

Steven
Steven,
It was pretty good...surprised to have a lingering taste of chocolate. I’ve had Hyde No. 3 before (which is very good) and was excited to try another type of Hyde whiskey. This bottle fell below my expectations. It was ok to try once, but I will not get this again.

Alex
Alex,
I can appreciate what they tried. The aroma leaves one impressed with notes of vanilla and custard. Unfortunately, the nose kicks you in mouth and isn’t very subtle. A for effort but not my whisky.

Jeremy
Jeremy,
Very smoky on the nose but not too much after. Very heavy vanilla and custard. Good but not great.

Joseph
Joseph,
Smells smoky and peaty but a smooth fruity taste. It’s not my first choice.

Lindsey
Lindsey,
Smells peaty, but has a much mellower taste. Definitely taste notes of custard and cookie!

Adam
Adam,
Really good sipper. I sampled it at room temperature and the biscuit/vanilla jumped out at me at the tail end of the taste. I then tried it neat over ice and once it chilled down it had an amazingly sweet front end. Really good whiskey that I’ll probably eventually buy a bottle of!

Austin
Austin,
This is a FANTASTIC strong sherry noted Irish Whiskey. The aroma is strong, spicy, and sweet and the flavor profile equally so. The aftertaste leaves you wanting more as the sweet, fruity, and aromatic first touches mold into a strong and lasting spicy bite at the end. One of the best Irish Whiskeys I have had. This will soon become a staple at my home bar, particularly in colder fall and winter months.
