Based in Portland, Oregon,
Westward Whiskey was founded in
2004. The company produces a number of Liqueurs,
Whiskeys,
Vodkas,
Rums, and Aquavits.
The distillery has its own
tasting room in Portland's famous
Distillery Row and
offers tours to the public. The focus, for these guys, is on craft, small-batch spirits, using the finest
ethically sourced ingredients.
For example, the
Westward American Single Malt is made with barley grown in the Pacific Northwest. Every batch of every Spirit and Liqueur is overseen by the Master Distiller.
Due to the fact that Whiskey is essentially made from Beer, Westward
hand-crafts their Whiskeys by initially brewing an
American Pale Ale, from scratch, using
locally malted barley, ale yeast, and slow, low-temperature fermentation. The Ale is then
twice distilled in their bespoke
low reflux pot stills, designed to create a
bold and
robust Spirit.
