If you check the dictionary under “WhistlePig” it will say that it’s a musically talented farm animal, and a shorthand for innovation in Whiskey-making. The story of WP started in 2007 when the founding crew bought a farm in Vermont and joined forces with Master Distiller Dave Pickerell. They stumbled upon barrels of Canadian Whiskey which they finished and bottled, writing the first chapter. What these fellas do is take traditional approaches and upgrade them for this day and age. Their most famous expression has been the 10YO (even appeared in Breaking Bad), but there’s a new (old) player in town.
WhistlePig Double Malt 18 Year Old Straight Rye Whiskey is a mouthful in both senses, and it’s the oldest WP’s release to date. This Rye Whiskey (79% rye, 15% malted rye, and 6% malted barley) spent full 18 years in the barrel and the result is a symphony of soft, floral rich and spicy flavors. Dave Pickerell went straight to old-school method of malting rye to create this potion. To make things even classier, they hand-bottled the juice and put on the ritzy Vermont glass stopper that was hand-press on one of the few existing 19th century glass pressing machines. The aromas that are released from the Spirit are sweet and oaky, and they introduce the palate to spicy, fruity and floral flavors. It’s a perfect Whiskey to sip slowly as the sun goes down.
