Tato Giovannoni worked in his father’s restaurant from his youth. He went on to become one of the most famous bartenders in Argentina and a sought-after cocktail consultant (how do we get that job?). It was only a matter of time before he opened his own bar and then stepped out to create his own spirits. Apostoles Gin is his first, and so far only offering, but we think he will have more to come.
Since Tato is Argentinian, he set out to make a Gin that reflected the flavours and traditions of his native land. One of the traditional drinks of South America is called “Mate.” It’s made from yerba mate — a native plant in the holly family that has been harvested by the local Guaraní peoples for centuries. Apostoles Gin has juniper, but it sits in the background. Yerba mate, eucalyptus, and peppermint step up front, and the effect is remarkable. Made in small, 200-liter batches in the Sol do Los Andes distillery, it tastes “warmer” and has an almost chocolate aroma that brings something exceptional and new to the classic Gin.
