Lars Williams & Mark Emil Hermansen are an interesting pair. These guys from Copenhagen, Denmark, are all about capturing precious memories and experiences. As we all know, smell & taste are powerful in that regard. Founded in 2017, Empirical aims to take advantage of that with their unique (and sometimes wacky!) Spirits that are meant to conjure the best of times. They go about it with custom-built machinery as well as unusual fermentation and distillation techniques. And plenty of that good old blood & sweat.
Plum kernels are sort of like the distant cousins of almonds with similar appearance and taste. Empirical set out to harness those fruity, marzipan, and rich aromas and flavors for their The Plum, I Suppose. Drawing inspiration from Williams' favorite dessert, they distilled the kernels of plump Stanley plums, then upped the ante with the addition of distilled marigold kombucha for some additional floral notes.

Fresh, floral, and fruity, it's the almond aroma and nuttiness that stands out the most.
Flavor / Taste / Palate
Almond and cake notes are on the palate with a touch of cardamom, marzipan, and bitter-sweetness.

The finish is long, bright, and nutty with a touch of tannins.
