The Dingle Distillery was launched in 2012 by three friends — Oliver Hughes, Liam LaHart and Peter Mosley — all of them veterans and pioneers of the Craft Beer revolution. As with many new producers, their budding Whiskey distillery began making Gin and Vodka while waiting for their Whiskey to mature. When Dingle started up in 2012, there were just two distilleries in Ireland, a country that once had more than 100. The founders wanted to create a new, artisan distillery to take on the big Irish brands.
Fear not, their Whiskey is now here and it's turning out to be a winner. Local well water, manual mashing, wooden vessel fermentation, distillation in 3 copper pot stills... It's proper Irish Single Malt juice that gets aged in the moist and mild coastal micro climate that is oh-so-perfect for Whiskey maturation. Speaking of which, Batch 4 features a very nice combo of Bourbon, Sherry, and Port casks with all those sweet dried fruit & vanilla notes.
Appearance / Color
Golden
Nose / Aroma / Smell
It's a well-balanced nose with the Bourbon influence the most apparent. Vanilla, cereal, and Sherry notes abound.
Flavor / Taste / Palate
It's oaky on the palate with some honey sweetness, vanilla, apricot, sultanas, and a touch of orange zest.
Finish
The finish is bright and satisfying with lingering citrus notes.
