Balcones Distillery is a small establishment with big ideas and an array of awards. They are leading a small Spirit revolution from Waco, Texas, where rivers of top-notch hooch are flowing: rugged Bourbons and delicious Single Malts that are bound to redefine what an American Whiskey can be.

One of their masterpieces is a wonderful True Blue — made from blue corn, no relation to "Heisenberg's ice." Blue Corn is also known as Rio Grande Blue and it grows in Mexico and the Southwestern US. It has a sweet flavor and is usually used to make tortillas. It's one of the reasons we can talk about terroir with this azure Whisky. It's a truly powerful dram, diluted town to 100 proof and it presents us with a complex and soft character, perfect both straight or with a splash of water.

Ripe apricots and mango on the nose with aromas of cinnamon, cocoa and dried chilies.

Flavors of deep oak and char, black tea and salty chocolate, accompanied by hits of old leather and coffee.

Lingering finish with aftertaste of dried cherries and bitter chocolate.
