Oola Distillery been crafting premium Vodkas, Gins, and Whiskeys in Seattle since 2010, going through over 200,000 pounds of grain each year. This makes the Oola facility the second largest independently-owned distillery in Washington state.
Their lineup includes: Vodka, Citrus Vodka, Rosemary Vodka, Chili Pepper Vodka, Gin, Waitsburg Barrel-Finished Gin, Waitsburg Bourbon Whiskey (and a rare release of the Cask Strength version of the Waitsburg Bourbon), Smoked Whiskey, Three Shores Whiskey, Three Shores Black Label Whiskey, and Discourse C.
Oola Waitsburg Bourbon
Oola Waitsburg Bourbon is really not just a nice medley of corn, rye, malted barley and white winter wheat. It's a deeply complex, balanced Bourbon that’s just the right amount of sweet.

Oola Distillery was founded by Kirby Kallas-Lewis in Seattle's Capitol Hill Neighborhood.
All grains for their Spirits are sourced from two organic farms in Eastern Washington. Once the ingredients arrive at the distillery, they are milled and mashed before being distilled through Kirby's copper-pot still.
They feature a pretty diverse portfolio of really unique Vodkas, Gins and Whiskeys. Following distillation, their Bourbons are matured in small, American white oak casks that are subjected to large temperature swings of up to 50-70° each day.

Welcome back to Evening from OOLA Distillery. Now finally I think we can try the cocktails that have been sitting in front of us. I have a Smoky Black Manhattan with a little orange zest and I will tell you something. Strong, yes, but good. What do you have there?
It's called Corpse Reviver Nr 2. Apparently it's a medical miracle. It's a Gin drink and there's a little bit of lemon juice in there I also detect some Absinthe. Or if somebody might have told you there was Absinthe in it.
You know OOLA was named after the owners’ German Shepherd. It was one of the first distilleries to open in Seattle post-prohibition. They're award-winning urban distillery. They use sustainable practices in the production of all their spirits.
I absolutely believe that because I have seen that they do all of their fermenting, distilling and bottling on-site, right here. And speaking of bottling we got to help out. What are you doing? I'm trying to put the labels on. The machine puts a label on the bottle. Very nice. Bottled perfectly every time.
