While a lot of “celebrity” brands cheat on the four-century-old Mezcal-making tradition by using unripened plants and additives, La Leyenda stays true to the roots. Their Mezcal is made from fully matured plants that have been growing for seven long years — no shortcuts, fake flavors, or phony advertising. But these guys aren’t just about making a great drink. They're also about giving back to the community. By funding their project through membership sales and sharing the profits with the farmers, they're helping to ensure that the little guys don't get swallowed up by big brands. So, as we said, the Blue Weber Agave takes seven whole years to mature, and once it’s ready to be harvested, a brave Jimador wielding a Coa de Jima (a hoe) chops off its spiky leaves, and out comes the piña. These heart-shaped gems are then subjected to steamy cooking, a period of rest, a cooling off, and finally a crushing to extract that sweet, sweet Agave juice. Their Blanco Mezcal is absolutely delicious, carrying a silky and nuanced body that's packed with earthy aromas and subtle hints of apple vinegar and dried lemon zest.
