For 4 people you will need:
- 4 bananas
- 40 g raisins
- 70 ml Rum
- 50 g brown sugar
- 8 large scoops of vanilla ice cream
- 60 g unsalted butter
- Slivered almonds
- Cinnamon
Pick your RUM
For the best flavour use aged Rum, and you could also try a spiced one. We used Dos Maderas PX 5YO + 5YO Rum. All of the guests ended up secretly (or not so secretly!) licking their plates, so we reckoned we must have done something right, and we like to think it was the Rum choice.
When you’ve settled on your Rum, soak the lucky raisins in it. Then forget about them for at least half an hour and go have some fun with your guests until...
Ladies and gents, the main act...
Melt the butter in a large pan, add the sugar and wait for it to melt into the butter. Peel the bananas and cut them length-wise. Place them in a pan and fry until golden-brown. Turn them over to fry on both sides.

If you’re not tempted at this stage to get on the phone to Cirque du Soleil about their fire acrobat vacancy, it’s time to serve the dessert.
Place the bananas on a plate and add the raisins and some sauce from the pan. Add two generous scoops of vanilla ice cream on each plate and decorate with some almonds.
