You just have to love the charming, independent, and rebellious spirit of Texas. Balcones Distilling is based in Waco — just about half way between Dallas and Austin. Texas is a big state, and they like everything big… big steaks, big trucks, big hats, and big flavors. Balcones is still a small distillery (thank goodness!), but it is filled with big ideas. They hand-make a range of Whiskies, Rums, and mysterious fiddly Spirits, all of which are unabashedly crafted with the big flavors they love. These Spirits are top notch, and they have the awards to prove it.

Balcones launched their company on Texas, heirloom blue corn. And this signature grain has influenced several of their most popular Spirits. Balcones Blue Corn Bourbon is an annual release built on their signature Bourbon foundation. But it’s bigger and bolder, coming in at a full cask strength of 65% ABV. The extra heat lets the flavors rock and roll. It’s a no-holds-barred, unapologetic expression of Texas pride in a Bourbon bottle.

I really wanted to like this bourbon. It’s a bit too smoky and bitter but it’s strong in flavor and can be made into a decent cocktail
