In the late '90s, Shane Baker and Pat Heist were tearing it up in a rock band, but destiny had a grander plan in store for them, waiting until 2006 to unveil their true calling. Armed with extensive knowledge in various scientific fields, more than two decades of industry know-how, yeast strains collected over the years, and an exquisite selection of top-notch corn, wheat, and rye varieties, they set off on their Bourbon path. Serendipitously situated in the hills of Historically Bold Danville, Kentucky— the very birthplace of Kentucky, mind you—and deeply rooted in the rich heritage of the Kentucky Bourbon industry for generations. At the core of their operation lies their ingenious secret sauce: the sweet mash process, the magic touch behind their consistently mouthwatering, award-winning concoctions. 

Wilderness Trail's Wheated Bottled in Bond Bourbon is the epitome of "small batch" prowess, with only 20 barrels per batch and pampered in premium Cooper select barrels with 18-month-old air-dried staves. This Kentucky-distilled Bourbon sports one of the highest wheat-to-corn ratios in the state (64% corn, 24% wheat, and 12% malted barley) and is aged for a minimum of 4 years and bottled at 100 proof, adhering to the rigorous criteria of “Bottled in Bond”. Its non-chill filtered soul unfolds in enchanting notes of vanilla, cinnamon, and charred oak, culminating in a bewitching finale of oak spices, toffee, and luscious dark fruits.

Instant Short List

This stuff is really, REALLY good. It quickly shot up the bourbon list to being a favorite for my friend and I. I'm not really great at picking out flavors and such, but this one is nice and smooth. There's nothing really peppery or spicy. It's just easy to drink and goes GREAT with a quality cigar ;-)

Wheated Bourbon

A great bourbon. Nose is oaky with some citrus. Taste is spice with some sweetness to balance it ; notes of vanilla, honey, and baking spices. Finish is long with spices and fruit.

Far too burnt, harsh on the opening sip. Following samples mellow as one aclimates to this bold taste. Might pair well with a robust cigar.
