The Blue Ridge Mountains of central Virginia are better known for Moonshine and renegade distilleries. Virginia Distillery Company is changing all that. The late Dr. George G. Moore moved arrived in Virginia from Ireland in 1970 where he raised his family and dreamed of making Whisky. In 2011, that dream become a reality when he founded Virginia Distillery Company with his wife, son, and daughter-in-law — who continue to run the operation. They currently have four Malt Whiskies in their portfolio, with another specially-sourced and aged Single Malt version due in 2020.
Cider Cask Finished Highland Whisky was the second product release from Virginia Distilling Company. There are a few Hard Cider makers in the Commonwealth of Virginia, and for this release they have contracted with two of them — Potter’s Craft Cider and Buskey Cider — to acquire their used Cider barrels to finish their blend of Scottish and Virginia Single Whiskies. But since Highland-style Malt Whisky lends itself to apple and pear flavors naturally, the use of the Cider casks does not so much alter the flavor profile as it emphasizes that aspect of the natural character.

On the palate you are met by a light creaminess and granola followed by wood and tart apple.
