Lexington Brewery & Distillery Co. is the first booze-making establishment built in Lexington, KY, in over a century and the only brewery and distillery combo on the Kentucky Bourbon Trail. Family-owned and operated by Dr. Mark Lyons, who represents the seventh generation of the Lyons family to be in the brewing, distilling and cooperage industry and founded by Pearse Lyons, the legendary Irish biochemist who also founded Alltech. Introduced in 2012, Town Branch brand bets on its lime-stone rich water source and local grains. The brewery/distillery creates Ales, Stouts, Gins, Whiskey, Ryes, and Bourbons. They ferment mash bills in cypress wood containers, while trusting the distillation to two large copper pot stills from Scotland. It is said that in every Spirit, there’s a bit of a Gaelic soul.
Town Branch 7 Year Old Kentucky Single Malt Whiskey is made using 100% malted barley – the same malt used for their Beer production. It’s matured in their own third use oak casks that had previously aged Town Branch Bourbon, then Kentucky Bourbon Barrel Ale and finally the malt that slumbers in a boozy-Beer barrel for a minimum of 7 years! Don’t be fooled by its light straw-color, this Single Malt has layers of flavor with a sweet cereal nose, notes of molasses, vanilla, brown sugar and nutmeg.
