Patrick Cooney knows Irish Spirits. He and his brother Nicholas purchased Gleeson — building the beverage-maker through organic growth and acquisitions to a nine-figure Irish giant. Patrick sold Gleeson in 2012 and has turned the family’s attention toward a new legacy — the Na Cuana beverage company and the Boann Distillery. It’s a true family business with his wife Marie, his daughters Sally-Anne and Celestine, and their sons Peter, Patrick, and James. Thier brands include Adams Ciders, Boyne Brewhouse Craft Beer, Robert A. Murray Irish Cream Liqueurs, and The Whistler Irish Whiskies.

On the Cooley Family farm, there are beekeepers. This makes total sense — it’s fairly common for farms and orchards to want to ensure the pollination of crops. So, they keep colonies of honeybees around to do just that. The Whistler Beekeepers Select Irish Honey is the perfect Whiskey collaboration between the Cooley Family’s distillery and the honey produced on their farm. It’s made by infusing honey into Irish Whiskey matured in ex-Bourbon casks. This sweet dram is bottled at 33% ABV and could be the best Honey Whiskey in the world, bar none. The judges at the World Liqueur Awards think so.

The rich honey notes dominate the aroma with an underlaying scent of almonds and Irish grains.

The palate leads with Whiskey and follows up with honey oats, creamy vanilla, marzipan, and butterscotch.

I truly enjoyed this. For those looking for the real sweet drink, like Irish Mist, Seagrams Dark Honey, this brings more heat. The whiskey comes to the front. Don’t dismay as the sweetness flows in afterwards like offering you a cold compress after smacking you square. Please forgive me as I’m quite the noob here and my nose hasn’t mastered the spiral...yet. This will be ever present in my bar.
