Robert Haynes is no stranger to bars. Not in the TGIF way most of us are but he’s consulted several renowned bar programs all around the world since 2007 when he started out in the hospitality industry. He was there when the iconic The Violet Hour was opened in Chicago. He was there when BËSK, a Swedish-style wormwood liqueur was developed. And he was also very much there when Analogue opened in Logan Square.Throughout the years, Robert remained at the cutting edge of cocktail culture. His newest thing? Sunday’s Finest Gold Fashioned, the first luxury ready-to-savor Old Fashioned, blended by expert bartenders with world-class ingredients.

Following up on 2021’s sold-out run of the Gold Fashioned 2021 Blend, the 2022 edition takes everything to new heights with a split-base blend of 3 Whiskeys: a 15YO Kentucky Straight Bourbon, a 9YO Kentucky Straight Bourbon, and a 6YO Indiana Straight Rye. But it’s not just about the Whiskeys, is it?

Complementing the Spirits, we have: Sunday’s Finest Saffron Bitters that were made in-house, naturally raw Fair-Trade Demerara from Malawi, hand-harvested Afghan saffron, wild-harvested French gentian root, and Seville orange peel for all the floral and bitter citrus top notes you need in your Old Fashioned to balance the warmth and spice, which comes from the single-estate Ecuadorian cacao and Grade A Tahitian vanilla. Then, we have an atomizer zest made from a blend of Valencia, navel, and blood oranges, misted over the poured cocktail.

The final result is that perfect balance of richness, spice, and character that can only be achieved if true experts are involved. A Double Gold medal at the LA Spirits Championship and a title of Bottled Cocktail of the Year from Esquire came immediately upon its release.
