Penelope’s signature, award-winning Bourbon blend is finished in French Rosé casks for a refreshing, bright limited edition release.

Mike Paladini and his wife Kerry had long agreed that if they had a daughter she would be named Penelope. In 2018 they had that daughter, named her as intended, and founded Penelope Bourbon at the same time with Mike’s childhood friend Danny Polise. As many start-up Spirits companies do, they have launched with a little outside help. In this case distilling and aging in Indiana at MGP and expert blending and bottling assistance from Castle Rock in Kentucky — whom they proudly call part of their team. And the team is working, with two successful releases under their belt and a fistful of awards already in hand.

Penelope Bourbon Rosé Cask Finish starts with their award-winning Bourbon. So that’s where this story begins. Penelope Bourbon is a blend of three Bourbon Spirits — two with rye in the mash and one with wheat-based. Two of them are aged two years, one is aged three in barrels that have a #4 char on the staves and the heads have a #2 char.

Penelope Bourbon Rosé Cask Finish is this most signature of Spirits finished in French Rosé Wine barrels to develop a bright profile with a hint of tannin and sweetness. And this is a real limited edition treat — they only made 2400 bottles in total without chill-filtering at a very nice 47% ABV.

Surprised with how smooth it is

This is my favorite whiskey and it definitely caught me by surprise. I opened up the bottle on Halloween with another friend of mine, and we drank half the bottle in one night. I typically don't buy the same bottle twice (only other is Eagle Rare) but Im currently in the process of buying this again.

Complete surprise

Agree with the last few reviewers. I would not have picked it up - generally not a fan of post finishing, seems a little gimicky. But this is very good. The rose finish is so faint that it adds a nice dimension without impacting what is otherwise a nice bourbon. I like it - buying another now.

This one surprised me (in a good way)

When this showed up in my subscription box & I saw the word rosé I wasn’t thrilled - not a fan. I expected too sweet but this whiskey surprised me pleasantly, with enough tannins and spice to balance the fruity/caramel sweetness. It’s all subtle enough so no one flavor dominates. Wouldn’t turn it down if offered.

Pleasant surprise

Have to agree with Jerry on this one. I tend to like the port or merlot cask finishes, but this one is now added to the approved list.

Enjoyable

I received this as my bottle with my tasting box. Have to say I probably would’ve passed on it in a store. That would’ve been a mistake. The nose is pleasant, the flavor profile is delicious, and it is a smooth drinker.
