At the heart of 3 Badge Beverage Corp. is August Sebastiani — forth generation grandson of Samuele Sebastiani, founder of Sebastiani Winery in Sonoma. This family has been making premium adult beverages for a LONG time. Interestingly, Sebastiani Winery was the only California winery that didn’t close during prohibition. How’d they pulled that off? Anyway, these guys keep cranking out some of the best craft spirits PERIOD. Currently, they produce a range of Gins, Whiskies, Tequilas, and Rums and you should try them all.
As you may remember, “reposado” means “rested.” In the world of Tequila, that means aged at least two months. But Pasote Reposado gets a little extra time — a full six months — and that time makes all the difference. Sometimes Reposados seem half-hearted efforts. But Pasote Reposado Tequila strikes a great balance between the pepper-and-fire of un-aged “Silver” Tequilas and the savory/sweet notes of more expensive “Añejo” (older) Tequilas. It’s Tequilas like this that actually make the category of Reposado worth having.
