Oak & Eden, born out of Texas-based Sanctified Spirits Company, know how to bring the heat with their innovative use of wood. While most Whiskey makers stick to the traditional path of barrel aging to infuse their Spirits with flavors like caramel and cinnamon, Oak & Eden breaks the rules by using a small, oddly shaped piece of wood called a Spire. It's like a spiral-cut piece of barrel oak, but instead of a second barrel, they let the Spire hang out in the Whiskey and work its mojo. This unorthodox method leads to a natural finish that produces flavors so sweet and rich you just know that they could only come from the wood's mystical powers. Currently, their product line boasts straight Bourbon, Rye Whiskey, Wheated Bourbon, and a Bourbon finished with Red Wine-steeped oak.
The Bourbon & Spire recipe reads 60% corn, 36% rye, and 4% malted barley, all distilled together to create a clear and pure Spirit known as the "White Dog." The White Dog is given a two-year ride in freshly charred American White Oak barrels to soak up some of its signature color and flavor. And then, in comes the twist — literally. Each bottle gets its own spire made from American Oak (masterfully cut and perfectly toasted, of course). This unique "in-bottle finish" leaves the liquid with a deliciously sweet flavor, enhanced with a delicate hint of honey and toasted coconut.
