High Wire Distilling Company is Charleston’s first operating distillery since Prohibition. It was founded by serial entrepreneur and Culinary Institute of America trained baker Scott Blackwell and his wife Ann Marshall. They had worked side-by-side running a specialty bakery which they sold to General Mills in 2012. The next step for them was a venture into Spirits, when the husband-wife duo opened High Wire in 2013. And not only has the venture been successful with a slew of product releases based on a culinary approach, but in 2019 they were nominated for a James Beard Award — considered the top honor in the food industry — in the category of Outstanding Wine, Beer, or Spirits Professional category.
Jimmy Red corn is an extremely rare — some would say endangered — variety of corn from the Charleston area. High Wire worked with the local university and professional seed rescuers to plant a dedicated field to produce enough Jimmy Red for production. Since Jimmy Red is high in natural oils that are left in the mash, the Spirit has a very creamy mouth-feel and nutty/sweet flavor profile. New Southern Revival Jimmy Red Straight Bourbon is 100% Jimmy Red corn Spirit aged a minimum of two years and bottled at 51% ABV, allowing the full flavor to shine through. The first release came out in 2018 and sold out within ten minutes. The fact that you can get a bottle of this rare gem for yourself now is a little bit of a miracle.
Smartass Corner:
Jimmy Red is a variety of corn that nearly went extinct. In South Carolina it used to be known as a legendary moonshiners corn with a brilliant red hue. After the last farmer raising it passed away, his family gave the last two cobs to renowned "seed saver" Ted Chewning who rescued the grain from extinction.

On the nose you’ll find sweet notes of nutmeg and Cracker Jacks, caramel and a dash of cinnamon.
Flavor / Taste / Palate
The palate opens with a wonderfully rich mouth-feel and complex notes of warm butter toffee, caramel corn, and even some cherry and banana.
Finish
The finish is rich and smooth.
