Here's a well-kept secret waiting to be revealed: a lovely Single Malt from the Matsui Distillery, located in the sandy prefecture of Tottori (120 miles from Kyoto). The distillery is mostly known for great Sake and Sochu, but they really know how to conjure Whisky. This one's 23 years old and is quite rare.
