Embark on a journey through time with the High Wire Distilling flagship Bourbon!

High Wire Distilling Company is Charleston’s first operating distillery since Prohibition. It was founded by serial entrepreneur and Culinary Institute of America trained baker Scott Blackwell and his wife Ann Marshall. They had worked side-by-side running a specialty bakery which they sold to General Mills in 2012. The next step for them was a venture into Spirits, when the husband-wife duo opened High Wire in 2013. And not only has the venture been successful with a slew of product releases based on a culinary approach, but in 2019 they were nominated for a James Beard Award — considered the top honor in the food industry — in the category of Outstanding Wine, Beer, or Spirits Professional category.

Jimmy Red corn is an extremely rare — some would say endangered — variety of corn from the Charleston area. High Wire worked with the local university and professional seed rescuers to plant a dedicated field to produce enough Jimmy Red for production. Since Jimmy Red is high in natural oils that are left in the mash, the Spirit has a very creamy mouth-feel and nutty/sweet flavor profile. Jimmy Red Straight Bourbon is 100% Jimmy Red corn Spirit for a minimum of two years in char 3.5 American oak barrels, this Bourbon embodies unparalleled flavor. Indulge in its rich graham, cinnamon, and maple notes, embraced by a velvety mouthfeel. Whether enjoyed neat in a proper whiskey glass or with a single ice cube, this Bourbon promises an extraordinary sipping experience.

Smartass Corner:
Jimmy Red is a variety of corn that nearly went extinct. In South Carolina it used to be known as a legendary moonshiners corn with a brilliant red hue. After the last farmer raising it passed away, his family gave the last two cobs to renowned "seed saver" Ted Chewning who rescued the grain from extinction.

As the Name implies "Red Hot"

5.9 average 3 person vote of this product. Very hot that could have been tapered by a few drops of water or ice. Scoring based upon 1st sip.

spicy and nice

I think this is spicy the entire time but in a very good way. Hubs says it's smooth at first and ends with a bite. He notes the honey in the smell. After seeing the profile, I noticed the brown sugar.

Strikes Like the Carolina Sun

Cinnamon, honey, oak, vanilla & VERY oaky. Almost woody. It’s a tad harsh but it’s different with the profile than most

Very nice bourbon

Amber Kingdom Advent Sampler 2023 Day 22. I used to be a bourbon drinker but my palate has moved toward single malt scotch as I have gotten older. In spite of that, I found this to be a very nice bourbon and I will be buying a bottle for my home bar. Sweet, peppery, spicy. By far the best bourbon in this year's Advent Calendar and one of the best samples overall.

Jimmy Red

A good bourbon. Nose is honey with a hint of spice. Taste is honey with mint, cinnamon, and brown sugar. Finish is lingering with some spice and a hint of tobacco.
