Jefferson’s was founded in 1997 by Trey Zoeller and his father Chet — a famed Bourbon historian who wrote the book on Kentucky distilleries. Yes, an actual book called "Bourbon in Kentucky: A History of Distilleries in Kentucky." And eight generations ago, their great-great-grandmother was arrested for the "production and sales of Spiritous liquors" in 1799. Which makes her the coolest ancestor ever! They acquire and produce a range of specialty Bourbons and Rye Whiskies. In 2007 Jefferson’s was sold to Castle Brands to build upon their portfolio of premium Spirits.
The Jefferson’s Ocean started as a three-barrel experiment. Each limited edition release of Jefferson’s Ocean "Aged at Sea" Bourbon is aged at sea. The specific blend, route, temperatures, and tossing of the sea are different — each a different "Voyage."
Jefferson’s Ocean Aged at Sea Cask Strength Voyage 21 is a blend of Kentucky Bourbons was launched from Savannah during a heavy storm season. It passed through the Panama Canal, went to Tahiti, Brisbane, dodged pirates in the Singapore Strait, looped passed the Philippines and Japan before returning to Savannah. The heavy seas and wild temperature swings imparted extra wood spice and toasted oak notes to the Bourbon, which is delivered at a Cask Strength of 56% ABV.

The aroma is sweet and thick with notes of burnt toffee, cinnamon, clove, and nutmeg.
Flavor / Taste / Palate
The palate builds up from and confirms the nose with added notes of mission fig, marmalade, and even a dash of mint.
Finish
The finish is long with a rich, savory, sweetness.
