There used to be a special kind of art in Ireland, an art that faded away a century ago. It's a craft of Whiskey bonding, a traditional business of sourcing casks all over the Island, aging and blending the Spirits for local Whiskey lovers. Between the 19th century and 1930s, hundreds of regional and local styles of Whiskey emerged. Now, after a sad hiatus, the art of Whiskey bonding is back!
Established in 2015, J.J. Corry sources new make Whiskey from various distilleries in Ireland and matures it on their farm in Cooraclare. While Whiskey comes of age, J.J. Corry sources and blends rare mature Whiskey and creates unique house styles.
Their award-winning flagship blend is 'The Gael': a classic blend of the oldest Single Malts and Grain Whiskies they have in stock, aged from 7 to 26 years old. The blend was created with some flavor-matching magic and traditional knowledge; no artificial nonsense and no chill filtering! The result is a small batch fruit bomb with layers of complexity that is perfect either neat or in a cocktail (Tuppence a Pound, if we may suggest one).
In 2021, Batch No. 3 of the iconic Gael was released. The mash bill is 5% 26YO Single Malt Ex-Sherry but, 27.5% 11YO Single Malt, 27.5% 15YO Single Malt and 40% 7YO Single Grain. The flavors? Ripe white stone fruit, lime, pink pepper corns and mineral flavors to boot.
