Founded in 2020, Isolation Proof was born in a wooden barn in the Western Catskills. The team had a mission to make something sustainable that you could touch, smell, taste, and share during special moments. They set on Gin. A Spirit-forward cross between a London Dry and New American style Gin, to be more exact. A farm distillery, their production process is intentionally low intervention, which means there’s no chill filtering for example. They honor the natural minerality in their spring water and the temperature fluctuations in their uninsulated barn. More than 80% of the raw ingredients are sourced from New York State, including the base Spirit.
Heady and woodsy with a silky texture, Isolation Proof Gin is based on a Spirit that’s made entirely from up-cycled whey. The whey is first turned into sugar and then into alcohol that’s infused with 7 botanicals. The result is earthy and spicy with an underlying sweetness that comes from organic licorice and orange peel. The finish is distinctly peppery from cubeb. It’s super versatile so you can use it in cocktails or simply sip it neat.
