A blend of single origin Golden Rums from Fiji with a fresh "cane in the field" aroma.

Windyside Spirits was founded by husband & wife combo Eric Kaye and Maura Gedid. Eric introduced Maura to fine aged Rums while they were dating and it became a shared passion. They formed Windyside Spirits in 2019 and set to importing premium single-cask Rums to support their new Holmes Cay brand. Their first stop, the famous Foursquare Distillery in Barbados where Eric and Maura struck a deal for their inaugural release. Since then they have reached out to curate fine examples of Rum from all over and deliver them to the world.

Fiji is actually a volcanic archipelago of more than 300 islands and 500 more islets. The largest island in the group is called Viti Levu, and this is where the South Pacific Distillery is located. They make Rum here using a column still and a pot still. Holmes Cay Fiji Single Origin Edition Rum is made from a variety of these Rums that were sent to the Netherlands for blending, and then bottled in New York in 2021. It’s best thought of a golden Rum bottled at perfect 46% ABV.

Nose / Aroma / Smell
The aroma opens with a "cane in the field" aroma followed by Demerara, citrus, and spice notes.

Flavor / Taste / Palate
Once the sip arrives on your tongue you’ll be surprised to find honey and pineapple notes with a bit of vanilla and clove.

Finish
The finish is medium-length and strong with nice dose of warm spices.
