Highspire Pure Rye Whiskey takes its name and inspiration from Robert Wilson — who founded the namesake spirit and the Wilson Distilling Company in Pennsylvania in 1823. Experienced California winemaker Austin Hope has worked to bring back the spirit of Wilson’s signature Whiskey with a winemaker’s twist.
Pure Rye Whiskey has 100% rye grain in the mash (95% rye, 5% malted rye). Rye is notoriously tricky, so even high-rye Whiskey normally includes at least a bit of barley to jump-start the fermentation process. This is a young Whiskey — aged 130 days. But it sips like an older spirit. That’s because Highspire ages the spirit is ex-Wine barrels from Austin’s winery. In addition, they put charred oak staves inside the barrels. The combination yields a fruit-froward Rye with a hint of smoke… and when have you ever heard that?
