As a state that provided the crucial 36th vote to end the Dark Era of prohibition, Utah deserves its own high-quality American Single Malt Whiskey, thought David Perkins, a biochemist turned distiller, when he established High West Distillery in 2007, Utah’s first legal distillery since 1870 and the only ski-in gastro-distillery in the world. Starting off with a small, 250-gallon still, and Saloon in a historic livery stable and garage in Park City, David’s vision and Whiskey-making skills soon turned out to be too big for the small place and the distillery grew into a world-renowned brand.
High Country American Single Malt Whiskey has a robust, flavor-forward profile that is typical for American Whiskies. Leaving the grain in during the processes of fermentation and distillation, instead of fileting it, they achieve a heavier mouthfeel and a more complex flavor. Adding to the complexity of flavor is the aging of the Whiskey in freshly-charred and second-use oak barrels for two to eight years. This exquisite Single Malt is then bottled unfiltered at an ABV of 44%. A delicious Whiskey, best enjoyed neat or on the rocks.
