Shinjiro Torii, the father of Japanese Whisky founded Suntory in 1923 by opening the first distillery in Japan, called Yamazaki. Shinjiro, started out as a pharmaceutical wholesaler and later wine importer had found his passion for Whisky after discovering the wonders of the ageing process of spirits.The business and the passion for Whisky has been passed down to Shinjiro’s second son, Keizo Saji. All Keizo wanted was to enlarge and perfect the family business and all that happened at the end of the century, making Suntory the biggest producer of Whisky in Japan.
Blended Whisky in Japan differs from the one in Scotland, as Japanese distilleries do not collaborate between each other and don’t allow different stock to be mixed. That is why Japanese distillers create diverse styles under one roof, using different techniques and yeast strains to produce different styles on their own and blend them together.
Hibiki 12 Year Old is a highly decorated Blended Japanese Whisky that includes Whisky from Yamazaki, Hakushu and also a small portion from Chita. It’s partly matured in plum liqueur casks, adding a special touch to an already magnificent Whisky which we can easily compare to any Scotch.
