Putting women in control of anything is generally a good idea; having them create booze is a scientifically proven smart move, since they have more taste buds and 50% more olfactory cells; but the best idea is a distillery entirely ran by ladies, especially when their Master Distilleress (yeah, it’s a word now) is a biochemist with a master’s degree in distilling. In 2017, Jill, Molly, and Jesse launched Freeland Gin, named after Jill’s granny, who wouldn’t touch hooch, but told Jill that if you want something really good, you have to make it from the ground up. This Portland-based distillery celebrates the Northwest and all the good things it has to offer. Currently, the band of ladies creates a Bourbon and a Gin.
Freeland Bourbon celebrates the South and Grandma Freeland, the sharp lady from Texas – the namesake of the distillery. It’s a careful blend of two Bourbons (3 and 12 years), married by the M.D. Molly Troupe into a palatial harmony of caramel, vanilla, cocoa, and spice. The Spirit spends a couple of years in charred American oak before it’s finished in Pinot Noir barrels from the Elk Cove vineyards. Here’s to Bourbon and the ladies!
