Even though Distillerie du Peyrat is a relative newcomer in terms of Cognac years, the family has been in the Cognac business for much longer. They started to get acquainted with the Spirit in the 1920s when Alcide Brisson and his son Paul acquired two alambics to distillate their own wine, but they were distilling Cognac for bigger market names until the 1990s, when Jean-François Rault, the owner of the brand decided to make it their own. And so, Distillerie du Peryat branded Cognacs saw the light of the day. As a lover of organic wine growing and nature, Jean-François Rault decided to focus solely on the production of Organic Cognacs. That’s right, this Spirit is as environmentally-conscious as it is delicious.

Their Organic Selection Cognac is a blend of young and lively spirits, bringing a unique vibrancy and true joy to the mouthful. The wine is sourced from their own estate in the Fins-Bois region, France, and also by the distillery’s partner winegrowers (all made organically!). This Cognac is distilled using de Distillerie du Peyrat's signature fatty distillation process, meaning they keep the volume of discarded heads to a minimum and incorporate a larger share of tails to the heart, producing a very well-balanced and rounded flavor of the Cognac. The spirit is then left to mature in second-fill oak barrels for a minimum of 2 years before being bottled at an ABV of 40%. Great to enjoy neat, but will shine extra brightly as a base for a cocktail.
