A pleasantly spicy Old Tom Gin with just the right amount of sweetness.
Situated amongst the rolling hills of Cotswolds, England, famous for its horticulture heritage and beautiful countryside, this state-of-the-art distillery with a personal touch is perfectly poised for the creation of fine Spirits. One of the only fully operational Gin/Whisky Distilleries in the United Kingdom, and the first Whisky made entirely in the Cotswolds, the distillery embraces the grain-to-glass ethos by hand-crafting in small batches using the finest local barley. This sort of production emphasizes quality at every step of the process, from floor malting to long fermentation and slow distillation in traditional copper pot stills.
Their take on the Old Tom Gin is crafted as lovingly as you'd expect from a distillery that takes things seriously and with a healthy dose of passion. The botanicals โ juniper, coriander, angelica, fresh orange peel, licorice root, ginger, caraway, and cardamom โ are added into their Holstein still named Valerie together with a 120-proof neutral wheat Spirit. Once the "hearts" are collected, they add a bit of sugar syrup and filtered water, before bottling the Gin at 84 proof.
