Coming from the borderland of southern Jalisco and northern Colima, Balancan Mezcal returns back to the roots in what is possibly the birthplace of Mezcal.
Harvesting the wild Lineño & Cimarron agave that ferment in the craters of some of the continent’s most active volcanoes, this bottle is made with pre-industrial techniques, including roasting underground, hand-mashing, and distillation in wooden filipino stills. This is an uncertified Mezcal, but sometimes that’s a good thing: it means more freedom to deliver the wild flavors of the region with traditional local methods.
