A fresh & crisp Gin from the first distillery in DC since Prohibitio

Ah, George Cassiday. No-good criminal to some, green-hatted angel to others. Upon returning from World War I, he found his homeland in the grip of Prohibition. Being a crafty devil, he set out on a business venture to supply Spirits to Capitol Hill. This led to a lucrative 10-year career of supplying booze to lawmakers, operating out of his office in the Cannon House Office Building and later the Russell Senate Office Building. He was eventually arrested, but evaded imprisonment, which should come as no surprise, considering the company he kept.

The first post-Prohibition distillery in Washington D.C., Green Hat Distillery was inspired by the green-hatted man. They produce Green Hat Gin from the best winter wheat. Oh, and the distillery was named #3 Best Craft Gin Distillery by USA Today.

With plenty of industry experience between them, they were the flag bearers of the craft distilling revolution, opening the first distillery in Washington, D.C since Prohibition. Only the best winter wheat goes into their Gin that's triple distilled in a copper-pot still. Their Original Batch Gin is a true Washington Original that will be especially enjoyed by the fans of juniper-forward blends that are balanced with original botanicals. The botanicals are added during the final distillation: juniper, lemongrass, herbs, and anise are noticeable on the nose and the crisp palate. Knock it down or mix it up, it's delicious either way! Oh, and let's not forget, it was awarded 95 Points from Tasting Panel Magazine.

London Dry Gin is not always from London. Gin does not have the same geographical restrictions as Spirits such as Cognac, Scotch, or Tequila. Only a tiny handful of London Dry Gins are actually made in the city.
Gin gets its dominant flavour from juniper berries. As with many other spirits, Gin was originally intended to be used as medicine. Yeah right!
It’s a common myth that Gin is a tear-jerker. Of course, drinking too much of it will make you feel awful the next day, but that’s the same with any alcohol.
While juniper-heavy Gin is perfect for your daily G&T, it is also complemented extremely well by tea flavours such as Earl Grey. Try steeping Earl Grey tea bags in Gin for an hour before mixing it with lemon juice and soda for a refreshing tipple. This one gets you additional kudos, so let’s keep it between us.
As producers try to develop new styles and flavors of Gin, to push the category and find a niche, the need for trying new methods of extracting flavors, as well as using more unusual botanicals, has grown.

One such way is the vacuum distillation method, when the redistillation of botanicals takes place in a vacuum.
Classifications of Gin: London Dry Gin, Plymouth Gin, Old Tom Gin, Genever or Dutch, New Western or new American or International style.
