Cambridge Distillery was founded in 2011 by William and Lucy Lowe in Cambridge. Their mission is to craft modern and innovative Gins that push the limits of Gin-making. These fine Spirits can’t be produced with traditional methods and for that purpose, they developed a unique novo-dimensional distillation matrix in which temperature, timing, and pressure play a crucial role but these are just 3 of the 9 variables used to tailor the treatment of each botanical.
William Lowe, an international Wine and Spirits judge, distills each of the local, seasonal botanicals individually to preserve the purity of their essence and expertly blends them together into mind-blowing Gin expressions.
Their signature Japanese Gin combines the quintessential Juniper berries with traditional Japanese botanicals, such as Shiso leaf, Sansha, and Yuzu. Their seasonal Gin is made four times a year with locally available botanicals mixed with juniper from Macedonia. Their Watenshi Gin captures the uncapturable: the angel’s share that’s preserved with atmospheric pressure that’s less than half that found at the summit of Mount Everest and extremely low temperatures.
The Cambridge Distillery also offers a unique service for one-on-one Gin tailorings, working together with a client on a recipe together, which will then be produced, just for them.
The Cambridge Distillery is run by husband and wife team William and Lucy Lowe. William, a former teacher for the Wine and Spirits Education Trust, and Lucy, who worked at the Cambridge Business School were walking their dogs when they decided to start their own distillery.
They set it up right there in their front room. Knowing that a large still would take up space, a large investment, and time to build, instead they created their own from lab equipment. Months of paperwork ensued, but today, the Cambridge Distillery - which produces only Gin – makes all of its Spirits in batches of no more than 50 liters.
The small-scale operation is perfect for their set up; producing a signature Gin, a Japanese Gin (you can guess where the botanicals are from), as well as a seasonal Gin made four times a year based on locally available botanicals mixed with juniper from Macedonia.
But more than just its regular bottlings, the Cambridge Distillery also offers a unique service for one-on-one Gin tailorings, whereby Lowe works with a client or individual to work on a recipe together, which he’ll then produce, just for them.
