The Responsible Trading company has partnered with Fazenda Vaccaro Farm in Brazil to produce and distribute Cachaça. In Portuguese, "abelha" means bee… as in honeybee. Abelha Organic Cachaça is the claim to fame for Marcos Vaccaro, Tom Stockley, and the rest of the team. Headquartered in Bristol, U.K., Abelha has developed an un-aged "silver" Cachaça and a rested "gold" Cachaça that have launched in the US and Europe this year.

Abelha Organic Cachaça Prata is the clear version of Cachaça — the word "prata" means "silver" in Brazilian Portuguese. But in this case, the silver Spirit does not mean neglected. After distillation, Abelha Organic Cachaça Prata is rested in open-air, stainless steel for six months to allow the flavors to develop. It is bottled at 40% ABV with zero added sugars. And it’s certified organic, gluten free, and vegan friendly.

Smartass Corner:
Cachaça is the national Spirit of Brazil. It is similar to Rum. But Cachaça can only be made from fresh-pressed cane juice while Rum can be made from molasses, cane juice, or a combination of the two. Rum Agricole follows the Cachaça process.

The aroma is bright and fresh with tropical fruits, herbal, and floral notes.

Flavor / Taste / Palate
The palate is lightly sweet and filled with notes of ripe stone fruits, mango, apricots, warm peaches, and a hint of plantain.

Finish
As expected, the finish is relatively short but alive with tropical notes.
