Windyside Spirits was founded by husband & wife combo Eric Kaye and Maura Gedid. Eric introduced Maura to fine aged Rums while they were dating and it became a shared passion. They formed Windyside Spirits in 2019 and set to importing premium single-cask Rums to support their new Holmes Cay brand. Their first stop, the famous Foursquare Distillery in Barbados where Eric and Maura struck a deal for their inaugural release. Since then they have reached out to curate the examples of Rum from all over and deliver them to the world.

You can say all Holmes Cay Rums are limited-edition, of course, but Guyana Uitvlugt 2003 edition is limited even for their standards. Just four casks, that's 858 bottles, mind you, have been produced. We thought we'd better mention it. Anyway, it was distilled on a historic French 4-column Savalle still, originally located in the legendary Uitvlugt Estate (you pronounce it »eye-flot«), hence, the name. Matured for 2 years tropically in Guyana and 16 years in the UK, it was actually bottled at barrel proof of 102 in New York State. No sugar, no color, no other flavors added, only complex aging process creating the outstanding flavor profile of overripe tropical fruits, almonds, herbs and a touch of cocoa. Quite unique, you could say.

Hard pressed to find a rum that has this much flavor and smoothness at 51%.
