You should know the Kilchoman distillery for a couple of reasons. First, it's the most westerly distillery in Scotland. Second, it's the first distillery to be built on Islay in more than 124 years. And third, it's one of the few Scotch makers to remain indie. They’re like Arctic Monkeys if cool riffs were peat. You should also know them for their fantastic expressions. See, their Whisky is made on-site in its entirety, from grain to bottle. 1130 days go by before the harvested barley becomes a bottle of Single Malt, staying true to the founder's mission set back in 2005: resurrect the lost art of farm distilling. And if you're wondering why does the Kilchoman peat have such a lovely maritime character: they get their peat from ocean-soaked bogs. Neat, right?
Kilchoman U.S. Small Batch Limited Edition is their special America-only Small Batch vatting that unites Bourbon and Oloroso Sherry matured Whisky with a cherry-picked Port hogshead. 70% Bourbon, 25% Port, 5% Oloroso, to be exact. The very limited experiment (only 1,260 bottles exist) offers layers of smooth flavors with a lot of peaty smoke, citrus and sea spray. It's the perfect way for Americans to feel like they're in Scotland. Sláinte!
